What is the lowest current that the current sensor can detect without it being too finicky?
I realize that's not always the same as the theoretical lowest current.

Somewhere in the 1-2 watt (so ~ 10mA) range. Because the sensitivity depends upon the geometry of your power cord, it's impossible to put a more accurate number on this.
This is a hackaday article which uses our current sensor to monitor a washing machine. The application needs to sense the current even when nothing is happening between cycles so the draw would just be a timing motor or DC supply for the computer. Probably in the range I mentioned.
