Direction-sensitive wind measurement

I want to measure wind velocity, ie speed and direction. To do this I plan to mount 4 sensors in 4 tubes pointing N, E, S and W. The tubes need to be as small as possible. So I need to know how little of the sensor has to be in the tube. What are the functions of the 3 components mounted on the "prongs"? I assume that temperature measurement components can be out of the main air flow.

Correct, as long as they are in ambient air somewhere.

Correct, the other bits are about ambient temperature correction.
