Yes you can but you'll need to choose correct board in the Arduino IDE. There may be some issues with code or code size as the "base" sketch size has grown a bit, and Atmega8 memmory has not.

Here are steps.

1) Gently pry the chip out with jewelers screwdriver or exacto knife
2) Bend the new chip leads perpendicular to top of the chip - they come splayed out on new chips.
3) Insert the new chip - aligning the notch in the chip with the divot in the circuit board silkscreen. Seat it firmly with your thumb.

In the Arduino IDE
4) Choose Tools->Board->NG or older w Atmega8.
5) I think you will probably need to push the reset button before hitting the upload button, to the sketch, but this may not be the case.
6) It's possible some example sketches might not work, but I think this will be pretty rare.
