Basically you want a small 8 ohm or 4 ohm speaker. A 4 ohm speaker will yield greater audio power (and also greater current draw).
The amplifier only generates around 1 watt so larger speakers will not do you much good.
We have 8 ohm speaker in the shop, that is the correct size for the ever-popular styrofoam cup enclosure, which is cheap and easy.
An enclosure will increase both the volume level and sound quality for any speaker.
